BEETS ARE DELICIOUS, NUTRITIOUS AND LOADED WITH IRON!
But the irony of the story is...I use to HATE BEETS!
I was a non-beet lover for over 45 years, perhaps like many of you. My beet journey began in 2008, after I became ill. Yes, during the recession arrrgh what a challenge. I was always fatigued at work, as well as at home. My symptoms were shortness of breath, heart racing, brittle-thin nails, and ooooh my goodness how I loved to crunch on ice!
While battling my illness, my symptoms became worse with more frequent shortness of breath, and lack on concentration and focus. I made a doctors appointment, and during my doctors visit she ran a few quick test. My doctor was very concerned with the results and sent me straight to hematology. The hematologist ran blood work and said my iron was extremely extremely low and she was very concerned. I was diagnosed with Iron Deficiency Anemia and was rushed out for an emergency iron infusion. An Iron Infusion is where they pumped my veins with iron for 4-5 hours. Phew! Well, I was fine for one year, and then had to undergo a second iron infusion. Oh my goodness, this is when I decided to change my eating habits. I started researching foods high in iron and folate, and discovered the amazing health benefits of beets! However, beets were on my do not touch, smell or consume list followed by okra, hot oatmeal cereal and brussel sprouts (ewh lol) I just never acquired a taste for beets, nor did I have a desire to. I truly thought beets were horrid! But as I continued to read and research about beets I became more and more intrigued and inspired.
Well it was now lunch time, and my mom left me some organic hotdogs and some fresh homemade (drum roll)... Pickled BEETS! Oh noooo. Now, I don't now about you...but I love myself a sloppy dog! So, I scrounged around look for toppings, and hmm nothing. I look at the pot of beets, and out of desperation I began creating recipes! My first beet product was comprised of many ingredients, initially to distort the taste of beets ;-) I mean, I threw everything in the mix except the kitchen sink! Then, my first beet relish recipe was born! I embellished a small portion of my first beet creation on the end of my hot dog and took my first bite. Whoa...that taste was insane, insanely delicious! Then I start to realize it wasn't the beet I disliked for all these years.... IT WAS SIMPLY, THE RECIPE! I grew more excited and began creating beet recipes like a little mad scientist! Now, I love beets and I'm the creator of many new delicious gourmet beet recipes. Nyk-Regine, the founder of Royal Beets. Go figure!
